PAYSAGE is a brand created by dessert craftsman Hideki Eto. Three years after the brand's launch, the long-awaited flagship store in Daikanyama has opened. We take a closer look at the driving force behind these beautiful, heart-warming desserts.

The dish is harmoniously presented with Tosa Buntan mandarin oranges from Shiraki Orchard, blood oranges, lychees, jasmine blancmange, white wine jelly, milk from Asunaro Farming in Tokachi, and ice cream made with cocoa pulp (fruit juice) produced by a Japanese person in Ecuador. The syrup made with chamomile, vanilla, anise, and other ingredients shines brightly. The dish is presented in a custom-made dish, which was created by requesting "cyclamen with curled petals" from Shinji Terauchi of Risou Kiln.

Delivering landscapes that will stay in your heart

Born in Tokyo in 1985. After training at renowned French restaurants and BEIGE Alain Ducasse TOKYO, he served as chef patissier at DOMINIQUE BOUCHET TOKYO, SUGALABO, THIERRY MARX, and unis. In 2020, he was appointed director patissier of Social Kitchen TORANOMON. In 21, he launched PAYSAGE. In 24, he opened a flagship store in Daikanyama.
As a child, Hideki Eto aspired to become a violinist and later dreamed of becoming a violin craftsman. The many happy scenes he experienced with cakes given to people on their birthdays or when they had worked hard on the violin led him to aspire to become a pastry chef, hoping to create things that would make people happy.
Just one bite brings a smile to your face. Whether it's a small baked good or a gorgeous dessert, the sweets created by Eto seem to have a mysterious power within them. For example, this one features Tosa Buntan as the main ingredient. It combines blood oranges, which are grown in the same region as the buntan, and chamomile, which is in season at the same time.
"My encounter with Shiraki Koichi of Shiraki Orchard, the birthplace of pomelo, dates back about 10 years, and I have met him many times and visited the orchard. I would be happy if this dish could organically connect and unite the producers, pastry chefs, and guests."
As you taste it, you may recall the Shiraki Orchard that Eto spoke of. Or perhaps some will recall a nostalgic event related to citrus fruits from the past. The image of the space and the person you shared the taste with will be etched in your mind, and you may even imagine the person you hope to share it with someday. Furthermore, some may be inspired by the color and flavor. Guests will be led to their own "PAYSAGE = landscape."
The reason why landscapes emerge in one's mind is likely due to the superb ingredients, techniques, and sensibility, as well as the respect and admiration for the producers. Mr. Eto's personality also plays a large role. Even upon first meeting, one feels a natural sense of familiarity and warmth. This feeling is reflected in everything that makes up PAYSAGE, from the desserts and baked goods to the botanical tableware and earthy interior design. The chef's table on the second floor, seating just six, is a private and special space, reminiscent of being invited into a mansion. The dessert course, titled "Le Jardi n Secret 'The Secret Garden'," consists of six dishes, each with its own unique flavor. As you reflect on each of these landscapes, you'll savor the desserts that will enrich your life. Mr. Eto's smile is sure to be etched into the many landscapes.
